Huntley and Palmers biscuit as used on the expeditions which Captain Robert Falcon Scott led to Antarctica, namely the Discovery expedition of 1901-1904 and the Terra Nova expedition, 1910-1913.
This biscuit supposedly used on Captain Scott’s expedition. Biscuits were a staple daily food for expedition members; Scott had his expedition biscuits specially made by Huntley & Palmers; they were eaten mixed with pemmican (dried meat and fat) and water to make a stew called "hoosh". The biscuit was made from the following formula of ingredients: flour 8lbs, rice gluten 13 3/4 lbs, wheat meal 10oz, sodium bicarbonate 2 1/2 oz and baked to a final water content of 5%. This recipe was formulated specially for the expedition by Huntley and Palmer and Dr Edward Wilson, Scott's expedition Doctor.
Rectangular biscuit with rounded corners and thirty-seven regularly spaced holes which pass through the biscuit; edges of biscuit have a rough uneven texture, in contrast to the smooth flat surface on the top & bottom; " H&P" stamped into the dough before baking.
